Place 1 slice each of ham and cheese in the center of each fillet. Cut to fit. Sprinkle orange rind and pepper evenly over each fillet. Roll the fillets and secure with wooden picks. Gently dip rolls in beaten egg, then coat with bread crumbs. Place in a 12x8x2- inch baking dish. Melt margarine in sauce pan over medium-heat; blend in flour. Slowly stir in milk and cook until thickened. Pour sauce over fish and top with parmesan cheese. Bake in a preheated 350-degree F oven for 20 minutes or until fish flakes easily.

 Ingredients

  1. 2 pounds of Florida Flounder fillets

  2. 6 slices of cooked ham, 1/2 oz each slice

  3. 6 slices Swiss cheese, 1/2oz each slice

  4. 1 teaspoonful Flora Orange rind, grated

  5. 1/4 teaspoonful white pepper

  6. 1 Egg beaten

  7. 1 tablespoonful of margarine

  8. 1 tablespoonful of all purpose flower

  9. 1 Cup of milk

  10. 1/4 cup of Parmesan cheese
